On this Memorial Day, while we BBQ , picnic and enjoy our local parades. Let us not forget the reason for this day. It is because of the bravery, sacrifice, devotion to duty, country, and the love of freedom in this wonderful nation. We owe our sincere thanks, love and support to our veterans. All of them the men and woman who sacrificed their lives for freedom. I bless all of them, whereever they are. Blessings to all the brave men and women in our armed forces.

I recently saw a post on Facebook that read "Just Eat Healthy" forget about Dieting". Well, I gave it some thought; what does eating healthy mean? Healthy foods are primary foods our bodies need for proper functioning. Proteins either plant based such as organic soy, tofu, vegetables or lean meats. Complex carbohydrates whole grains, brown rice. Fruits, berries etc. In our fast paced world of eating on the run, at the office in the car, plane, train. We often do not eat as healthy as we would like to. Or often we are picking up fast food on the way home from work due to our over extended schedules. Each of us has our own definition of what healthy is. Our bodies and minds need healthy nutritious foods for growth and development especially when we are in childhood and teen years. Even in adulthood we need the vitamins and nutrition that healthy primary foods gives us for our bodies to function at their optimum best. What is healthy to you? Most of the "Paid Programming" on any given weekend morning will demonstrate the latest gym equipment and how it will sculpt, and trim inches off your waist, hips and buttocks in about 4 to 6 weeks. They advertise the pill that has been medically approved by a "clinical" study that promises to melt off body fat producing with amazing results. It is often followed by testimonial from various persons who have used this product. Or it is endorsed by a famous celebrity who promises you it worked for them. Most of these items have never been approved by the FDA, or they are just placebos that do nothing but raise your heart rate. They may do more harm than good. Losing weight and obtaining optimum health can seem difficult in our fast paced society. We desire to be fit and healthy by using products that may or may not work, or a peice of gym equipment that eventually we will grow weary of. Healthy eating habits happen slowly, over a course of time by adjusting our bodies to dietary changes. Replace one unhealthy habit with a healthy one. Excercise with a 20 to 30 minute routine on a daily basis for a proper way to start achieving your goals. Your health is priceless, not $29.95.

Jucing is a fun and nutrional way to get your vitamins, minerals, fruits and vegetables and the best part is, it's easy and enjoyable to do. You can take your juiced drink with you on the go during your busy day as a quick morning snack or lunch. Today, I juiced with wheatgrass. I took two cubes of wheatgrass (when you buy wheatgrass it comes in frozen cubes), 1/4 cup of water and two apples. Put them through a juicer adding the pulp into the juice with ice cubes. You can also do this as a delicious cold summer soup, adding a lime or lemon juice to the mix for added citrus zest. Recipe courtesy of wheatgrassforlife.com

Our health and well being is your most precious asset; without your health your whole world can be turned upside down. In yesterday's newspaper; there was a comic the main character asked his doctor; "What is wrong with me" The doctor's response was: 1. You eat and drink too much, not getting enough sleep; lack of exercise, knees,back, have issues; hearing and eye sight need assistance. So, his response is: "Can I take a pill for this"? In our I want it now world, we take our health for granted. We want it all in an instant; like putting food in the microwave. Your health and wellbeing is your responsibility. we all want the results but with non of the work involved. The programs on the TV or radio tout equipment to help sculpt our bodies into fashion models; or even the latest pill or drink mix. Healthy foods, fresh clean water and healthy fitness is the way to achieve optimum health and vitality. Each person should do at least 10 to 15 minutes a day of activity., either walking, gardening, biking, hiking; any physical activity during the course of your day. Your health is a treasure, when you are healthy and well not just you benefit but your family, friends and everyone who loves and needs you. Yogurt - there are many varieties from "light" 'low fat" and even one that helps with digestive issues. The latest craze in Yogurt now is "Greek" even the store brand has a greek product. But, putting that all aside, let us look at fact vs fiction, Many of our favorite brands have more than just calcium in the ingredients. I have seen brands with more than 20 grams of sugar - (two of these a day comes up to 40 grams of sugar) A store brand I found today was less than 4oz and contained 30 grams of sugar.(two or more of these equals 60. If Yogurt is the food to help with calcium intake, is there a reason for all this sugar? The ones that have added fruit are in a fruit syrup adding more sugar to the 4 to 6 oz package. If you eat more than one of these a day the sugar consumption adds up. Some have artificial sweeteners added to the product. The front of the box has the fantasy, all the beautiful colors, words that tell you what the product is about., but if you turn the item around that is were we separate fact from fiction. Even the children's yogurts that are supposed to help our children's growing bodies with calcium have more fluff than substance. Placing cartoon characters on the front only sells the product - the real truth is on the ingredient label. Check the facts before you buy, look at the ingredients in your food. The bathroom scale., it is an object that we all have in our homes. It is also the thing that is in every gym or weight loss clinic. Why does this object have such authority? Every time we "weigh in" we almost feel we are being judged as to the numbers on this are a testimony to our person. Does this object does not know who we are, or what we are. Are we less of a person if the numbers are go up or down? In the youth oriented world we live in with impossible body images displayed on television, magazines and the like; it seems we have given this scale more authority than it deserves. I know that before we even approach it the feeling of dread comes over us, whether we are in the gym with the personal trainer or in the privacy of our home. This metal object declares its super powers. There are many different ones out there, some display not only your weight but water weight and BMI. I recall one that actually announced your weight in a robotic voice. I really do not want to hear my weight announced out loud no matter where I happen to be. I was in a market in Florida a few years back and standing over 6 feet tall in the front of the store was the biggest scale I have ever seen. It seemed to mock all of us, "I dare you to step on me" ha,ha,ha. All the world will now know how many pounds you are". What you weigh has nothing to do with the person you are, or how you feel about yourself. What do you think?

Television advertisements for fitness equipment and supplements offer a view of instant weight loss,gain of energy,vitality and optimum health. All this and more for a mere amount of money, including shipping and handling. Well, what are they really offering? So much of these items are a novelty and the appeal wears off quickly. The models in the ads have perfect shapes that we are enticed to obtain, but what they leave out in the information is these people do this fitness 8 to 10 hours a day when most of us are lucky to have 30 minutes or an hour to devote due to work and family obligations. Weight loss and better health are not obtained without effort on our own part. Even the weight loss supplements or drinks can contain high levels of sugar,caffeine or other stimulants that can be harmful to our health and well being. When we think about weight loss, so many of us feel we have to give up the foods we love and therefore, our minds tell our bodies that we are going to starve; so in turn our bodies hold on to fat in self defense. Any weight loss should be done slowly, with subbing one unhealthy habit for a healthy one; such as: 1. Replacing a sugared drink with sparkling water and a lemon or lime wedge. 2. Fresh cut up vegetables with a low fat yogurt dip in place of a packaged or bottled dip. 3. Preparing fresh meals with lean meats or if you prefer meatless dishes with tofu or beans. In my local newspaper, a comic stated a reality that really is a sign of the times. A couple is at the market, the woman is reading the ingredient label on the food. She states: "Stearic acid, amylase, sodium stearcyl lactylate and hold on - what is this word C-I-L-A-N-T-R-O? When looking at a food label the words should not come from science fiction. What is really in your food is no laughing matter. Chemicals, addivities and other ingredients; reading the label can be a challenge. 1. Lactylate: A group of organic based addtives used in food, beverages and cosmetics to enhance ther products shelf life. 2. Amylase - is a enzyme that assist with the breakdown of starch into sugar. It is present in human salvia. In the famous words of Hippocrates; "The natural healing force within each one of us is the greatest force in getting well. Our food should be our medicine. Our medicine should be our food" 3. Sodium Stearcyl lactylate: A powder material used as an emulsifer for baked products such as pancakes,waffles it is a subsitute for milk or cream. 4. An ingredient I saw in a bread product today, was "Lactic Acid" This occurs during excersice when your muscles are overworked. Ingredient labels are the real story behind your food. If you cannot read it, don't eat it! Foods that are packaged in box or a bag or a can, are preserved for their shelf life. But you would think in our technological day and age where are the advancements for keeping our food fresh? This past week, I was invited back to high school visiting the school lunch program. Not only was the food prepared fresh, with whole grains, snack are baked not fried with fresh vegetables and fruit. The best part was a commitee of students that are now actively involved with the program. They are offering suggestions and other ideas for healithier menu fare. It is so refreshing to see the students involved after all they are eating the food and should be involved in the process. I was there with the food services provider, the principal and a reporter for our local newspaper and a photographer. All the equipment in the cafeteria is energy efficient, from freezers to stoves. I feel so blessed that I was able to begin the change a change to better health and wellness for everyone. Yes, you can get involved with your child's school. Not just on the academic level but the nutrion level as well. Contact your school food services provider, principal and share ideas and suggestions. Our children are the future, their growing bodies and minds need proper foods to fuel their growth and development. Get involved, get active! .

Do we actually take the time to "taste our food"? We seem to be in such a hurried rush to get from one task to another often times our eating habits are either standing up, eating in the car,plane,train or at our office desk. When we eat taste each flavor of your food. The texture, smell, chew slowly so we digest properly. When we eat too quickly our minds and bodies do not recall that we actually ate something an often times we cannot recall that we already had a meal. Enjoy your food. Take the time to really be mindful of what you are eating. In doing so we are in the present moment fully aware that we have eaten and our bodies are properly nourished. When we eat in haste, our bodies have a hard time recognizing that food was consumed and we are hungry again. Taking the time to eat properly our digestive systems are not overtaxed, leading to bloating, gas or other digestive issues.

Being Fully Present, Mind Body Awareness. What exactly does this mean? it means to be in the present the here and the now; so much of our lives are rushed that we are not even aware of being in the moment. In Yoga we take the time to mediate, taking the time to be fully present. Allowing ourselves to watch our breath moving in and out. When we take the time to be fully present, we enjoy life,instead of life passing us by. When we are fully present; enriching your body,mind and spirit.

Happy New Year 2012! We all have our resolutions in place stating we will lose weight, be healthy and exercise. For this new year have a plan. Well, what happens to this plan? It is often derailed by ourselves. We are in charge of us. But we use the eternal excuses such as: "I work so late; I cannot make a proper meal" or "I will wait until my children are in school". Well, the excuses are our mind keeping us within our comfort zone. We want change but are worried to take action and make something of our plan. We tend to be worried about changes. The person in charge of this change is you: no one else. If you want to see results that will be everlasting for better health, vitality and optimum wellness recognize you are in charge of you. Start small, make easy simple changes. Swap one unhealthy habit for a healthy one. Replace drinking soda, with water. If you want flavor in your water squeeze in some lemon, or lime juice. Eat fresh fruit, cut up vegetables for a healthy satisfying snack. When you make dinner put some away in a container for work the following day. Take action, have a plan and get started. Success in life starts with you!

Eating together can be a challenge, due to everyone's busy lives. Running to after school activities, shopping, working late at the office, we are running everywhere and living in our cars. Recently, I made a meal with my daughter. We usually have different taste in what we eat and although we do eat together, we usually do not eat the same foods. Together we made a tofu dish with vegetables. The tofu was pan fried until crispy and then we sauted vegetables with a bit of peanut oil. We both enjoyed not just eating together, but cooking together. Here is the receipe for you to try: Serves 4 2 1/2 fl.oz of vegetable stock 1/2 cup of cornstarch 2 tbsp. of soy sauce 1 tbsp superfine sugar pinch of chile flakes for the sir fry: 9oz/250 g firm tofu rinsed and drained thoroghtly and cut into 1/2 inch 1 cm cubes 4 tbsp peanut oil 1 tbsp grated fresh ginger 3 garlic cloves, crushed 4 scallions, thinly sliced 1 head of broccoli, cut into florets 1 carrot, cut into thin strips 1 yellow bell pepper thinly sliced 5 cups of shitake mushrooms, sliced thinly steamed rice to serve To make the marinade, blend the vegetable stock, cornstarch soy sauce, sugar and chile flakes together in a large bowl. Add the tofu and toss well to coat. Set aside to marinate for 20 minutes. In a wok or large skillet, heat 2 tablespoons of the peanut oil and stir fry the tofu with its marinade until brown and crispy. Remove from the wok and set aside. Heat the remaining 2 tablespoons of peanut oil in the wok and stir fry the ginger, garlic and scallions for 30 seconds. Add the brocccoli, carrot, yellow bell pepper, mushrooms to the wok and cook for 5 to 6 minutes. Return the tofu to the wok and stir fry to reheat. Serve over freshly steamed rice.
